Ingredients for Citrus Salad
Salad
- 5-6 different pieces of your favourite citrus fruits. I used pink grapefruit, blood or moro oranges, clementine oranges, cara cara orange and honey tangerines.
- 2 tbsp of chiffonade basil
- 2 tbsp of chiffonade mint
- 1/3 cup of crumbled goat cheese or feta
- Pomegranate seeds
Salad Dressing
- Zest and juice one blood orange
- Zest and juice one lemon
- 1/2 cup Riesling white wine (I prefer a drier variety)
- 1/2 organic sugar
- 1 tsp lemon honey or regular honey
- 1 tsp chopped fresh rosemary.
Instructions
Salad
Peel and slice your favorite citrus such as pink grapefruit, moro or blood oranges, clementine oranges, cara cara oranges and honey tangerines. Arrange on a salad platter. Chiffonade basil and mint and add. Crumble goat cheese or feta and add. Sprinkle with pomegranate seeds.
Dressing
Zest and juice one blood orange and one lemon. Combine both in a sauce pan. Add ½ a cup of Riesling white wine along with ½ cup organic sugar, 1 tsp of lemon honey and 1 tsp of chopped fresh rosemary. Bring to a boil to dissolve the sugar and then lower to simmer for 15 minutes. Dressing will thicken slightly.
Sprinkle with Himalayan pink sea salt and pour over your platter. Enjoy!
