Ginger Snaps - Just like mom made!

This is my mother’s ginger snap recipe and I hold it near to my heart. They are simple and delicious holiday cookies with a bit of spice. I hope you enjoy them as much as my family does!

Ingredients for Ginger Snaps

3/4 cup soft lard (tenderflake)
3/4 cup soft margarine
1 1/2 cup sugar
2 eggs
1 cup molasses
1 tsp vanilla
4 1/2 cup flour
4 tsp baking soda
1 tsp ginger
2 tsp cinnamon
1 tsp salt
2 tsp baking powder
1/4 tsp cloves

Instructions

Beat together the lard, sugar, salt, and baking soda.

Beat in the egg, then the molasses.

Add the flour and spices, beating to make a smooth, fairly stiff dough.

Chill dough well (1 hour).

Roll into balls – approx. 1 good tsp then dip into sugar or sprinkles.

Bake 7-9 minutes. Watch as they burn easily – once they crack they’re done!
